Sous Chef
Sous Chef – Full-Time Position
Merriman’s Kapalua is hiring a Sous Chef.
This is a key kitchen leadership role focused on training and leading the team, supporting recipe development and consistent execution, maintaining sanitation standards, and helping manage labor, inventory, and food quality in a high-volume environment.
What You’ll Do
Select, train, evaluate, lead, motivate, coach, and discipline kitchen employees to meet established standards
Assist with recipe planning and development and ensure consistent preparation and presentation
Control labor and operating expenses through scheduling, budgeting, purchasing, and inventory control
Ensure sanitation compliance with restaurant standards and local, state, and federal regulations
Maintain quality and portion control systems, monitor food shipments, and support kitchen organization and cleanliness
Communicate with managers and teams to meet operational needs and support regular meetings
Support banquets and special events, including menu, production, and prep when needed
Perform additional duties as assigned
Requirements
Experience in a high-volume restaurant
Working knowledge of cold food preparation and sanitation standards, and operation of kitchen equipment
Desire to lead, coach, and mentor
Ability to work in a team environment and multi-task in a fast-paced setting
Strong written and verbal English communication skills
Ability to use POS and basic office equipment, and manage operational data
Knowledge of Microsoft Word and Excel
Some travel may be required for training, conferences, and special events
Legal work authorization in the United States
Pay and Benefits
Base salary: $70,000 to $80,000 per year (depending on experience)
Bonus opportunity: $7,500 to $10,000 per year (total compensation $77,500 to $90,000)
In-house dining allowance: $5,000 per year
Medical, dental, vision, and life insurance fully covered by Merriman’s, including family coverage
401(k) plan eligibility after 1 year
PTO: 1 week paid during year 1, 3 weeks paid in years 2–3, and 4 weeks after 4 years
4-day work weeks available
Education Benefits

$200 per year cookbook allowance
$2,500 for approved culinary classes
Menu planning meetings with Corporate Chef
Uniform allowance: $250 per year
