Chef de Cuisine – Full-Time Leadership Position

Merriman’s Kapalua is hiring an experienced Chef de Cuisine to lead kitchen operations at our flagship Maui location.
This senior leadership role is responsible for culinary execution, team development, financial performance, and maintaining the highest standards of Hawaii Regional Cuisine.

Having a chef as founder and owner makes Merriman’s a rewarding environment for culinary leaders who are passionate about quality, local sourcing, and mentoring the next generation of chefs. We work closely with local farmers, fishermen, and ranchers while using the best cooking techniques and operational systems.

Pay and Benefits

  • Base salary: $80,000 to $90,000 per year (based on experience)

  • Bonus opportunity: Up to $15,000 annually based on profit
    (total compensation potential of $95,000 to $105,000)

  • In-house dining allowance at all Merriman’s restaurants

  • Monkeypod dining allowance: $5,000 per year

  • Medical, dental, vision, and life insurance fully covered by Merriman’s, including family coverage

  • 401(k) eligibility after 1 year

  • PTO:

    • 1 week paid during year 1

    • 3 weeks paid during years 2–3

    • 4 weeks paid after 4 years

  • 4-day work weeks available

Education Benefits

  • Culinary travel: yearly all-expenses-paid culinary education excursion

  • $200 per year cookbook allowance

  • $2,500 for approved culinary classes

  • $250 per year uniform allowance

  • Menu planning meetings with Corporate Chef
